Veggie Tacos.

Hello darlings, back with my latest thing. We are going to be heading into the kitchen today! A little fact about me is I love to cook and bake. So today I am going to be a sharing a Veggie Taco that is really perfect for any time of the day. Sometimes I have a hard time fitting in my veggies because I’m not a big salad fan.. I love veggies and will eat them raw but sometimes you just want something different. So this veggie taco is perfect. They are quick, simple and taste amazing. You can really use any vegetables you have hanging out in your fridge or freezer. Today in mine I threw in some spinach, Red/yellow bell peppers, and broccoli. I fry all the veggies in a pan really quickly just to cook everything!

I add Cumin, Garlic Powder, and Crushed Red Pepper Flakes. It is that simple. I throw everything onto a tortilla shell. I always use the Mission low carb shells (they only have 6 carbs per wrap,)

Then I add a little cheese and salsa. Next I take a little bit of this Jalapeno Tomatillo sauce that I love and mix it with a little sour cream. Just add a few little dollops and you are ready to eat!

I swear I could eat these things all day! You won’t miss the meat at all. (Although adding meat would be fine!) Sometimes it is just nice to change things up! This is such a great way to get in your veggies for the day and still get your taco fix!!!

  1. Oh, yum!! I don’t eat much meat to begin with but I’ve never thought to substitute meat for veggies in a taco – even though it seems so simplistic. Ha! And, that jalapeño tomatillo sounds DELISH! I may have to try to find some of that! 🙂
